They do sell maple syrup here, but it is extraordinarily expensive, about 50 lira for a small bottle. I usually try to bring back bottle of imitation maple flavor to make my own faux maple syrup from, but if I don’t have that, this recipe works nicely.
1/2 cup brown sugar
1 cup cream
1/2 cup white sugar
1 tsp vanilla extract
Let the sugar caramelize a little. When it is light brown slowly add the cream. Stir in the vanilla and simmer until sugar has dissolved, stirring constantly.
